Vegetable Ribbons

Ingredients
  • 2 carrots
  • 2 zucchini
  • 2 yellow summer squash
  • 1 T of butter (or coconut oil)
  • 2 t lemon juice
  • 1 t minced garlic
  • ½ t salt
  • ⅛ t pepper

Instructions
  1. Using a vegetable peeler or cheese slice cut thin slices down the length of each vegetable to make the ribbons.
  2. Add butter (or coconut oil) into a large skillet over medium heat until melted.
  3. Add the vegetable ribbons.
  4. Sauté the vegetable ribbons in the butter (or coconut oil) for 2 minutes.
  5. Add in lemon juice into the mixture.
  6. Add the garlic, salt and pepper and blend until well combined.
  7. Cook for 4 minutes, stirring occasionally, or until the vegetable ribbons are crisp but tender.

zuch2These Stuffed Zucchini Boats would make a great side dish, appetizer, or even main dish served with a side of marinara and pasta!

Stuffed Zucchini Boats

Ingredients
  • 4 medium zucchini
  • 5 t olive oil, divided
  • ¼ t garlic, minced
  • ½ C dry bread crumbs (gluten free or regular)
  • ½ C Monterey jack cheese, shredded
  • 1 T fresh basil, minced
  • ½ t salt
  • 3 T grated Parmesan cheese

Instructions
  1. Preheat the oven to 375°F and spray abaking pan with nonstick spray.
  2. Cut the zucchini’s in half lengthwise.
  3. Scoop out all the pulp leaving a ¼ inch shell and reserving the pulp.
  4. Brush the zucchini with 2 t of the olive oil.
  5. Chop the zucchini pulp.
  6. Place the remaining oil into a skillet over medium heat.
  7. Stir the pulp and on in into the oil.
  8. Cook 5 minutes stirring often.
  9. Stir in the garlic and continue cooking 1 additional minute.
  10. Add the bread crumbs into the skillet and stir for 2 minutes or until the bread crumbs turn a golden brown.
  11. Remove the skillet from the heat, cooling to touch and stir in the mozzarella cheese.
  12. Add the basil and salt.
  13. Spoon the mixture into the shells.
  14. Sprinkle the tops with the Parmesan cheese.
  15. Bake for 8-10 Minutes or until zucchini is soft.
  16. (optional) Broil on high for 1 minute to brown cheese lightly (make sure you watch during this step as to not burn the cheese)

Fresh Green Beans with Basil and Mint

Fresh Green Beans This would be a GREAT side dish for Mother’s Day. Light and yummy!

Obviously frozen green beans would work, too.. you just wont need to cook the beans as long.

Ingredients
  • 6 cups of water
  • 2 lbs. fresh green beans, cleaned and trimmed
  • 2 garlic cloves, chopped
  • ½ cup fresh basil, shredded
  • ⅓ cup fresh mint, shredded
  • 1 small sweet red pepper, chopped fine
  • 2 tablespoons of olive oil
  • ½ teaspoon salt
  • Pepper to taste

Instructions
  1. Pour the water into a large pot and place over high heat.
  2. Let the water to come to a boil and add the beans.
  3. Bring the water back to a boil then reduce to medium.
  4. Simmer the beans for 7 minutes.
  5. Add the garlic and continue simmering 1 minute longer or until the beans are crisp tender.
  6. Drain and place in a large serving bowl.
  7. Add the basil, mint, red pepper, and oil on top of the beans
  8. Toss gently to coat the beans with the herb/pepper mixture
  9. Sprinkle on salt and pepper and light toss to distribute.

Homemade Baked Beans with Pineapple

Ingredients
  • 2 (15 oz.) cans Great Northern beans, rinsed and drained
  • 1 cup of canned diced pineapple
  • 4 bacon slices, cooked crisp and crumbled
  • 1 onion, diced or 1 tablespoon onion powder
  • 1 T of pineapple juice
  • ¼ C of molasses

Instructions
  1. Set the oven temperature to 350 degrees.
  2. Place the beans in an ungreased 2 qt. casserole dish.
  3. Stir in the pineapple, bacon and onion until well combined.
  4. Stir in the pineapple juice and ⅛ cup of the molasses
  5. Spread the mixture out evenly in the dish.
  6. Drizzle the remaining molasses over the top of the entire dish.
  7. Bake 45 minutes or until bubbly around the edges.

Peach Pork Chops for Grill

Ingredients
  • 4 boneless pork chops ¾ inch thick
  • 1 t salt
  • ½ t pepper
  • 4 Peaches, pitted and cut in half
  • 3 T of Peach jam (or a bit extra if you want the yogurt sweeter)
  • ½ C plain yogurt
  • ¼ C lightly salted cashews, coarsely chopped

Instructions
  1. Allow the grill to preheat to medium.
  2. Sprinkle the pork chops on both sides evenly with the salt and pepper.
  3. Place the chops on the grill rack, close the lid and allow the pork chops to grill for 4 minutes.
  4. Add the peaches to the grill.
  5. Turn the chops over and brush them along with the peach halves with 2 T of the peach jam.
  6. Continue grilling 3 minutes then turn the peaches and brush again with the jam.
  7. Grill an additional 2 minutes
  8. Grill peaches until they are softened slightly. then place aside.
  9. Move chops from direct heat and allow the internal temperature of the pork chops reaches 145 (medium) to 160 degrees, up to 15 minutes.
  10. Place the yogurt into a small mixing bowl.
  11. Add the remaining peach jam and whisk until well blended.
  12. Place the chops on separate plates.
  13. Added grill peaches next to chops
  14. Drizzle with the yogurt mixture.
  15. Sprinkle each with cashews.

Grilled Pineapple

Grilled Pineapple

Ingredients
  • 1 fresh pineapple

Instructions
  1. Heat the grill to low temperature.
  2. Cut off the crown (the leaves) and bottom of the pineapple.
  3. Slice the pineapple down the sides, removing the peel and eyes, make sure to remove as much as you can the skin and eyes are tough.
  4. Cut the pineapple into quarters and remove the core (or if you have a pineapple corer, use that).
  5. Cut the quarters into ½ inch slices.
  6. Place the pineapple on the grill racks.
  7. Grill them for 15 minutes, turning once or until browned, make sure not to burn.
